Roasted Garlic Butter & Lime Corn Ribs

Finger-licking and delicious, these zesty lime and garlic butter corn ribs are served with a spicy sour cream dip for a summer barbecue side dish that’s fun to both make and eat.

Corn Ribs

4 ears corn, shucked
⅓ cup butter, melted
1 tbsp Better Than Bouillon® Roasted Garlic Base
1 tbsp lime zest
4 tbsp lime juice, divided
2 tbsp finely chopped fresh cilantro
1 tsp chili powder
1 tsp ground cumin
½ cup grated Parmesan cheese

1 tbsp lime zest
2 tbsp lime juice

Directions for Corn Ribs

    Preheat grill to medium-high heat; grease grates well.

    Using a large sharp knife, trim both ends of each ear of corn. One at a time, stand up each corn vertically, then cut each ear in half lengthwise, slicing with a rocking motion. Place each half flat side down and slice each in half lengthwise. (Each ear of corn should give you 4 ribs; you’ll have 16 ribs in total.)

    In small bowl, whisk together melted butter, Roasted Garlic Base, lime zest, 2 tbsp lime juice, cilantro, chili powder and cumin. Brush corn ribs with melted butter mixture.

    Arrange corn ribs on grill with kernel side down. Cook for 7 to 9 minutes or until charred in spots (the ribs will start to curl). Turn and cook on cut side for 1 to 2 minutes or until tender.

    Transfer corn ribs to large bowl. Drizzle with remaining 2 tbsp lime juice evenly over top and sprinkle with Parmesan.

    Meanwhile, whisk together sour cream, hot sauce, lime zest and lime juice.

    Serve corn ribs with spicy lime sour cream for dipping.

To make corn ribs easier to slice, boil corn for 5 minutes to help soften the cores. Let cool and dry well before cutting. For shorter ribs, cut ears of corn in half crosswise first and then proceed to slice each ear of corn as above to produce 8 ribs. Alternatively, air-fry corn ribs at 400°F for 10 to 12 minutes, turning halfway through the cook time.
