Ingredients
| Quantity | Ingredient |
|---|---|
| ¼ cup | olive oil |
| ¼ cup | dry white wine |
| 2 Tbsp | Better Than Bouillon® |
| 1¼ Lbs | boneless skinless chicken breasts, cut into 1-inch pieces |
| 12 slices | prosciutto, halved lengthways |
| ¼ cup | grated Parmesan cheese |
| 4 | lemon wedges |
Directions
Preheat grill to medium-high heat; grease grates well.
In medium bowl, stir together oil, wine and Culinary Collection Italian Herb. Add chicken and toss to coat. Let marinate for at least 5 minutes.
Fold halved prosciutto slice back and forth twice, then thread onto skewer and 1 piece of chicken. Continue threading prosciutto and chicken onto skewer (for a total of 4 to 5 pieces of chicken). Repeat to make 8 spiedini.
Grill spiedini, turning occasionally for 10 to 12 or until chicken is well marked and cooked through.
Sprinkle with Parmesan and serve with lemon.
Tips: If using bamboo skewers, soak in water for 20 to 30 minutes before using to prevent them from charring on the grill.
Serve spiedini as a wrap in grilled flatbread with arugula, tomatoes and garlic mayo, or over rice.
Prepare these as an appetizer if desired: Use shorter skewers, and cut folded prosciutto slices in half.
