Vegetarian BBQ Lentil Sliders

Lentils are an inexpensive source of protein, have a mild flavor and mimic the texture of ground meat nicely. They are a great pantry staple to always have on hand to make meatless recipes like these quick and easy BBQ lentil sliders.

2 tbsp olive oil
2 stalks celery, diced
1 onion, diced
2 cloves garlic, minced
⅓ cup beer
2 tbsp Better Than Bouillon® Seasoned Vegetable Base
1 can (19oz) no-salt-added lentils, drained and rinsed
1 cup barbecue sauce
1 bag (12oz) coleslaw mix
⅓ cup coleslaw dressing
12 slider buns, split and toasted

    In large skillet set over medium heat, heat oil. Cook celery, onion and garlic for 3 to 5 minutes or until starting to soften

    Stir in beer and Seasoned Vegetable Base; bring to a boil. Cook for 1 minute. Stir in lentils and barbecue sauce; bring to a boil. Reduce heat to medium-low. Cook for 10 to 15 minutes or until sauce is thickened and celery is tender.

    In medium bowl, toss coleslaw mix with dressing.

    Divide lentil filling among bottom slider buns. Divide half the coleslaw over lentil filling. Cap with top slide buns. Serve with remaining slaw on the side.

Tip: A lager or pale ale works well in this recipe. For a nonalcoholic version, use nonalcoholic beer or substitute with half each orange juice and apple juice.
