This speedy take on an old-fashioned classic is pure comfort food for the whole family.

2 Tbsp | butter |
1 | large onion, diced |
3 | carrots, diced |
3 stalks | celery, diced |
3 Tbsp | Better Than Bouillon® Roasted Chicken Base |
½ tsp | pepper |
2 cups | chopped chicken or rotisserie chicken |
1½ cups | all-purpose flour |
2 tsp | baking powder |
¾ cup | milk |
2 Tbsp | finely chopped fresh parsley |
Directions
Melt butter in large saucepan set over medium heat; cook onion, carrots and celery for 3 to 5 minutes or until starting to soften. Stir in 8 cups water, 2 Tbsp Roasted Chicken Base and pepper; bring to boil. Stir in chicken.
Meanwhile, stir together flour and baking powder. In separate bowl, stir together milk and remaining Roasted Chicken Base; stir into flour mixture just until combined.
Drop heaping tablespoonfuls of batter into saucepan. Cover and cook for 10 to 12 minutes or until dumplings are puffed and cooked through. Sprinkle with parsley before serving.
Alternatively, sprinkle with chives as a garnish.
