Serve these rich and flavorful roasted mushrooms as a side dish with grilled meats or roasts. Make a double batch so you can toss any leftovers with pastas or salads, or tucked into sandwiches.

3 tbsp olive oil
2 tbsp Better Than Bouillon® Organic Roasted Beef Base
1 lb sliced brown mushrooms
1 tbsp finely chopped fresh thyme
¼ cup crumbled goat cheese
1 tbsp lemon zest

Directions

    Preheat oven to 450°F. In large bowl, whisk oil with Roasted Beef Base in large bowl. Add mushrooms and thyme to bowl, tossing to coat well. Arrange on parchment paper–lined baking sheet.

    Bake, tossing halfway through, for 20 to 25 minutes or until mushrooms are golden brown and tender. Sprinkle with goat cheese and lemon zest.

Tip: Alternatively, use a medley of mushrooms, such as oyster, button, shiitake and portobello.
