This chow mein with rich shiitake mushrooms makes a fast and flavorful dinner any night of the week.

2 Tbsp | oyster sauce |
2 Tbsp | rice wine vinegar |
4 tsp | sesame oil |
2 Tbsp | light soy sauce |
2 tsp | brown sugar |
¼ cup | canola oil |
1 lb | shiitake mushrooms, stems removed and thinly sliced |
2 cups | shredded green cabbage |
1 | onion, thinly sliced |
3 cloves | garlic, minced |
12 oz | thin egg noodles, cooked |
4 | green onions, thinly sliced |
1 | fresh red chili pepper, thinly sliced |
Directions
Whisk together Seasoned Vegetable Base, 2 tbsp water, oyster sauce, vinegar, sesame oil, soy sauce and brown sugar until blended.
Heat oil in wok or large skillet set over high heat; cook mushrooms, stirring, for 3 to 5 minutes or until starting to brown. Stir in cabbage, onion and garlic; cook, stirring, for 2 to 3 minutes or until cabbage starts to wilt.
Stir in sauce and noodles; cook, stirring, for 2 to 3 minutes or until well coated and heated through.
Sprinkle with green onions and chili pepper before serving.
Tip: For a crunchy topping, sprinkle with chopped cashews or peanuts.
