4 | boneless, skinless chicken breasts (about 5 oz each) |
½ cup | smoky barbecue sauce, divided |
2 tbsp | Better Than Bouillon® Organic Roasted Chicken Base |
1 bag (2 lb) | frozen French fries |
1 tbsp | cornstarch |
½ tsp | pepper |
1 cup | frozen peas |
8 oz | cheese curds |
Preheat grill to medium heat; grease grate well. Toss chicken with 1/4 cup barbecue sauce and 1 tsp chicken base.
Grill chicken for 5 to 7 minutes per side or until instant-read thermometer inserted into center of chicken reads 165˚F. Let stand for 5 minutes. Slice chicken; toss with remaining barbecue sauce.
Meanwhile, cook French fries according to package directions.
In saucepan, combine 1 3/4 cups water and remaining chicken base; bring to boil. In small bowl, whisk together cornstarch, pepper and 1/4 cup water until smooth; whisk into boiling broth. Return to boil; boil for 1 to 2 minutes or until thickened, stirring constantly.
Stir in peas; cook for 1 to 2 minutes or until heated through.
Divide French fries among 4 plates. Top with chicken slices, cheese curds, gravy and peas.
Tips: Substitute cubes of mozzarella or mild Cheddar cheese for cheese curds. Substitute corn for frozen peas.
